So I have had this bag of lentils in the cupboard for a while and I finally got around to making some soup with it.
Now, understand, when it comes to cooking I am not that great and I didn't have a recipe to follow so I created my own. Much to my pleasant surprise it tastes pretty good and looks good too.
In case anyone is interested in a quick, easy, cheap, tasty dish that will serve a lot, here is how I made it.
1 bag of lentils,
1/2 large onion,
8 smoked sausages,
1 bag frozen mixed veg,
1 tablespoon (aprox) Betterthanbouillon beef
fresh ground pepper to taste
Prepare lentils as per instructions on package.
After lentils have simmered for 10 min, chop sausages and onion then add to lentils.
cook for 40 min
add bouillon, mixed veggies and pepper
stir well
cook for an additional 10 min.
stir and serve.
